Can I pick the functions individually?

Can I get ambient lighting if none is fitted?
No. Coding only unlocks what is physically there. Without the hardware it would be a retrofit — a different job.
Do the settings survive a battery change?
Yes. The values are stored permanently in the control unit and survive a loss of power.
